      i've never made chile verde before. do you have any recommendations?

      this is the way i make it, but there are many different variations:

      PREP
      -cut up several pounds of thick (1" to 2") boneless pork chops into 1.5" squares, season w/salt and pepper on all sides
      -roast 15 to 20 pasilla peppers until soft, de -seed and cut lengthwise into strips
      -cut up 5 or 6 onions into slices
      -cut up 2 red and 2 green bell peppers into thick clices
      -finely chop up 6 or 7 de-seeded jalapenos (reserve seeds)
      -chop up one big bunch of cilantro
      -chop up a few cloves of garlic
      -4 or 5 quarts of chicken broth
      -3 parts cumin, 1 part coriander, .25 part paprika, .25 part chili powder, .25 part oregano, salt to taste

      COOK (all in same pot)
      -add a bit of oil to pot on medium high heat. brown the pork on all sides, but do not cook it all the way through. remove from pot and set aside
      -add onions and bell peppers to pot and saute for a few minutes until softened slightly
      -add jalapenos, garlic, and spices and saute until the fumes from the jalapenos start to make your eyes water
      -add the chicken stock and scrape up all the burned bits off the bottom of the pan with a metal spoon
      -add the pasillas and half the cilantro
      -add the pork back into the pot
      -stir well and bring to a boil, then set heat to low, partially cover, and...

      -simmer for 2 to 3 hours, stirring occassionally

      -15 minutes before serving, add the rest of the cilantro and bring to a boil

      serve with rice, carrots, radishes, roasted green onions, and beer

      Not bad for $1.49/lb. Ribs are meaty as fuck for grocery market ribs. Got about 30lbs worth. Just put one package into the pressure cooker. Yes I said pressure cooker. 40 minutes in the pressure cooker = fall off the bone tender. Slather bbq sauce then a couple minutes each side under the broiler = goddamn delicious ribs in a fraction of the time it would take in the oven.

      Upper left is boneless pork shoulder meat that will be used for a big pot of chile verde and chile coloardo.

      I'm a NY Strip loin guy. Big thick ones served Chicago style.

    • I know a guy who used to work for a big supermarket as a meatcutter. He told me about what he saw come in, he told of cutting tumors and things out of the sides of beef. He would not eat supermarket meat. You buy something precut and wrapped in plastic you are poor and a fool.

    • wny not get a smoker off amazon under 200 will get you a kick ass one, you obvioousely have not had good ribs, you have to cover the taste with HFCS or sugary sauce.
